The Non-Cook's Thanksgiving Menu

If I were going to buy one new thing for my Thanksgiving table this year, it would probably be these cute bird napkin holders

But, who am I kidding?  It's near to impossible to have a nice, sit-down Thanksgiving meal with a six-, four- and one-year-old.  It's even more impossible to sit a pretty table (and keep it that way).  And, I have no intentions of cooking (or touching) a turkey.  I'll be making my stand-by bacon-wrapped chicken.  My mom sometimes makes this in place of turkey or ham at the holidays and it's always a hit. 

Best of all, it's super easy.  About five minutes of prep time and four hours in the oven so you can go do other things with your day.  For those who are interested. . .

  • 6 to 8 boneless chicken breasts
  • 1 jar dried beef slices, rinsed and patted dry
  • bacon slices (one for each piece of chicken)
  • 2 cans cream of chicken soup
  • 1 8oz. carton of sour cream
Line the bottom of a 9x13 baking dish with dried beef slices.  Wrap each chicken breast with a slice of bacon and place on top of dried beef.  Mix soup and sour cream and pour over chicken.  Bake at 250 degrees for 4 hours.

We like to eat ours with mashed potatoes, green beans, rolls, etc.  And, it's even better heated up the next day.

So, there you have it.  Don't expect to see many more recipes around here.  I'm not a cook, nor do I pretend to be.  I would rather decorate a kitchen than actually use one.

  1. LOVE that meal so much! We call it "Chicken Breasts Supreme" and it is a big time family favorite of ours. In fact, we had it this week. Mmmm, so good!

  2. I love cooking for Thanksgiving even though we are vegetarians. I make tofurky ( I know, don't laugh) and then a few vegetable side desihes such as mashed cauliflower, sauted brussel sprouts with chestnuts, roasted root vegarables with a kick ( cayenne pepper), cornbread dressing with chestnuts and wild mushrooms. OK, I am getting hungry so I will stop.

  4. My family isn't huge fans of Thanksgiving food (with the exception of mash potatoes). We always make the turkey but no one ever eats it. That's because we always make something else as well like scallops or filet. This year my mom is making an olive smoothered duck (we had it in Paris and it was to die for). I'll be making butternut squash soup and will make sure to post my recipe as it is super easy!

  5. Hmmmmm. I'm not a cook AT ALL -- aren't kitchens just to look pretty and microwave things? -- but I actually may be able to do that recipe. What exactly are dried beef slices and where does one find those in the grocery store?

  7. I love to make a traditional T-day dinner but draw the line @ Christmas (go figure)....I just got some fresh, sweet Japanese turnips and was going to do smoked duck with turnips - except I cannot find a good duck...so I will do it with chicken breasts instead!

    I love the idea of spending Thanksgiving doing things OTHER than cooking, though. What a novel concept! LOL!

  8. Yum!!! I don't cook, so much as 'prepare.' I'm not a red meat eater, and pretty picky about my poultry...so I typically like all the sides!

  9. Thx for the shout out! And I'm with you, I LOVE those napkin rings. (I may have to go pick some up! I'm into birds this year if you can't tell!) Your Thanksgiving approach sounds so much more "stress free" than mine... all of our beds and much of our floors will be filled with family this year. Fun & Crazy... wish me luck!

  10. I am hosting for 14 this year, so taking on quite a lot, including the turkey. My father-in-law hates poultry (weird I know), so he will be bringing filet as well, random, but hey if he's happy I'm all for it!

  15. You are a girl after my own heart, Emily! I'll have to try out this one, but lucky for me, my mother-in-law INSISTS on cooking a turkey every Thanksgiving, so I haven't done one in years! :)

  17. I've never even heard of that! I'm surprised you can cook the chicken breast for 4 hours without them getting all dried out- I guess that's where the bacon and soup help. I'm totally gonna try this!
